2 carrots, grated fine
1/2 cup chopped onion
2 tsp. minced garlic
1 cup vegetable broth
1 can (19oz) Progresso Tomato Basil Soup
4 servings instant mashed potatoes prepared 'soupy' (more milk)
Dash black pepper

Directions:
Directions:
Prepare mashed potatoes in large pan. Simmer carrots, onions & garlic in vegetable broth until puree. Add tomato soup, and bring to slight boil. Add tomato soup mixture to potatoes and blend well (should be thick & creamy)
Sprinkle pepper to taste. Serve with a fresh basil leaf floated on top. Great winter soup!
