2 stalks celery, chopped
1 small onion, peeled and chopped
1/4 cup butter
2 tablespoons flour
2 cups chicken broth
1 cup milk
1 cup light cream
1 cup water
1 container smooth/creamy peanut butter
Salt, to taste
Pepper, to taste
Watercress, to garnish
Peanuts, to garnish

Directions:
Directions:
Brown celery and onion in butter. Stir in flour and gradually add chicken broth. Add milk, cream, and water - bring to a slight boil then strain through a sieve. Return to pot and add peanut butter and simmer for 30 minutes. Season with salt and pepper. Garnish with watercress and fresh peanuts, if desired, when serving.
