Ingredients: Cake 2 cups flour 5 eggs 1.5 cups granulated sugar 2 sticks butter, softened 2 teaspoons baking powder 6 apples (MacIntosh or Roma) 1 tablespoon cinnamon 1 teaspoon sour salt 1 tablespoon lemon juice 1/2 tablespoon Vanilla sugar (Nielsen-Massey or India Tree brand)
Crumb Topping: 1/4 stick butter, softened 2 tablespoons flour 1 tablespoon confectioner sugar

Directions:Grease and flour a 9x13 pan. Preheat oven to 350ºF. Peel, core, and cut up apples into small pieces, place into small bowl and add 1/2 cup sugar, cinnamon, sour salt, and lemon juice. Mix well until ingredients are evenly distributed in the apples. Mix remaining sugar and 2 sticks butter together in a bowl, using an electric mixer. Add one egg at a time and continue to mix. Add flour gradually, then baking powder, followed by vanilla sugar. If dough is watery, add 1-2 tablespoons of flour, if needed. Pour batter into the pan. Layer apples on top
To make crumb topping, mix the 1/4 stick of butter, two tablespoons of flour, and confectioner sugar with a spoon (initially). Change and mix with fingers so that crumbs form. Sprinkle crumb mixture on top of apple layer in the pan. Bake 40 - 50 minutes. |

Notes: Vanilla sugar can be purchased in better grocery stores or at Williams Sonoma or Sur la Table. Peaches, apricots, or plums can be substituted for apples or all mixed together, for variation.
