Graham cracker crumbs
1 pound cottage cheese
2 8 ounce packages of cream cheese, softened
1 3/4 cups granulated sugar
4 eggs, slightly beaten
1/3 cup corn starch
2 tablespoons lemon juice
1 tablespoon vanilla extract
1/2 teaspoon almond extract
1 cup butter, melted
1 pint sour cream

Grease one nine inch spring form pan. Preheat oven to 325' F.
Mix 1/2 cup melted butter and graham crackers and press into the bottom of the spring form pan to form the crust.

Sieve cottage cheese into a large mixing bowl. Add cream cheese and beat with an electric mixer at high speed, until well blended and creamy. Continue to beat at high speed and blend in sugar, then eggs. Reduce speed to low and add corn starch, lemon juice, vanilla, and almond extract. Beat until blended. Add melted butter and sour cream; blend at low speed. Pour into prepared pan and bake for approximately 70 minutes or until firm around the edges.

Turn off the oven and let the cake remain in the oven for two hours.Remove from oven and let cool completely on a wire rack. Chill and then remove the sides of the spring pan.

Top with cherry topping, if desired.
