2 7 oz pkgs sweet cornbread mix
1 cup whole milk
2 eggs
1 1/2 cup chopped cooked chicken
1/3 cup barbeque sauce
chopped sweet pickles for garnish

Directions:
Directions:
Preheat oven to 400º, lightly spray 24 cup mini muffin pan. In medium bowl combine cornbread mix, milk and eggs stirring until smooth. Spoon batter evenly into the muffin tin. Bake until lightly brown, 10-12 mins. Let cool in tin 5 mins. While still warm remove from pan and push down center of muffin with thumb making a 1/4 in shell. In small bowl add chicken and BBQ sauce, spoon mixture on muffins, garnish with chopped sweet pickles.
