1/2 lb. butter, softened
1/2 C. powdered sugar
pinch of salt
1 lemon rind, grated
3 egg yolks
7 tbsp. evaporated milk
1 tsp. baking powder
2 1/2 C. flour
prepared fruit filling, Solo or Bohemian Kitchen prepared fruit filling

Directions:
Directions:
Mix sugar and butter. Add egg yolks, milk, salt and lemon rind. Add flour and baking powder, blend well. Wrap dough and refrigerate overnight, or put into the freezer for several hours. Roll the dough out on a floured board to about 1/8" thickness. Cut into squares or circles. Fill with 1 tbsp. fruit filling and fold the corners together or over the circle. Bake at 350º until lightly browned. 10-12 minutes.
