8 hard boiled eggs
1/2 cup mayonnaise
1 generous tsp. mustard
1/4 cup (or less) chopped onion
seasoning salt and pepper

Chop eggs, and stir in other ingredients. Serve on toasted bread for sandwiches. You can add chopped celery if you like.

This is a good Lenten meal and is always pairs well with tomato soup served in coffee mugs of course! Don't forget pickle spears.
