Cover eggs in saucepan with cold water. Should have 1 to 1 1/2 inches above eggs.

Bring eggs to rolling boil. Turn off the heat and cover the pan. Let sit for 10 minutes if you want softer egg yolk. 15 minutes for hard boiled yolk.

10 min for med eggs (hard boiled)
12 min for large eggs (hard boiled)
15 min for XL eggs (hard boiled)

Put eggs in ice bath -- to cool down eggs. Eggs are easier to peel when they are cold.
