CRUST:
1/2 C. butter
2 oz. unsweetened chocolate
2 eggs
1 C. sugar
1/2 tbsp. peppermint extract
1/2 C. flour
1/2 C. almonds, blanched and chopped
Filling:
3 tbsp. butter, softened
1 1/2 C. powered sugar, sifted
1-2 tbsp. milk
1/2 tsp. peppermint extract
3-4 drops green food coloring

Glaze:
2 ozs semisweet chocolate
2 tbsp. butter

Use a 9x9" pan. CRUST: Melt the butter and chocolate together, cool. Beat the eggs and sugar until frothy. Add the chocolate mixture, blending well. Stir in the peppermint extract, flour and almonds. Spread into a greased 9" square pan. Bake at 350º for 25-30 minutes. Cool. FILLING; Cream butter and powered sugar. Add milk and peppermint extract, beating to a smooth frosting consistency. Add food coloring. Spread over cooled chocolate crust. Allow to set. GLAZE; Melt chocolate with butter. Cool slightly and spread or drizzle over top of filling. Refrigerate until set. Cut into bars. Should be refrigerated. This can be doubled using a 9x13" Pyrex dish.
