1 small onion, diced
1 small can mushrooms, drained and sliced
2 tomatoes, diced
4 English muffins, toasted and buttered
8 slices Canadian bacon, heated
1 pkg. hollandaise sauce, prepared according to directions
8 poached eggs
1 jar artichoke hearts, chopped

Directions:
Directions:
Saute the onion and add muhrooms, artichoke hearts and tomatoes. Place two English muffin halves on a dish. Top each muffin with one poached egg. Then top with artichoke/mushroom mixture and hollandaise sauce. Sprinkle with paprika for garnish.
