1 Tbsp. sugar
1 Tbsp. chili powder
2 Tbsp. olive oil
1 ½ tsp. salt
¾ tsp. garlic powder
¾ tsp. ground cumin
¼ tsp. ground ginger
¼ tsp. ground cinnamon
¼ tsp. black pepper
2 ½ lbs. split chicken breasts

Prepare grill or heat oven to 350º. Combine first 9 ingredients, stirring well. Loosen skin from chicken and rub spice mix under skin. Lightly coat skin with cooking spray. Place meaty side down on grill rack coated with cooking spray. Grill 30 min or until thermometer in thickest part registers 165º, turning twice. Let stand 10 min. Remove skin before serving, if desired. If baking, cook 45-50 minutes or until done.
