2 1/2 cups seasoned croutons
1 lb. sausage
4 eggs
2 1/4 cups milk
1 can cream of mushroom soup
1 10oz. pkg. frozen spinach, thawed, drained and dried*
1 cup shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
1/4 tsp. dry mustard

Directions:
Directions:
Spread croutons on bottom of greased 9x13 pyrex baking dish. Brown sausage and drain, then sprinkle over croutons. Whisk together in large bowl, eggs and milk. Stir in spinach, soup, cheeses and mustard and pour over sausage. Refrigerate overnight. Next morning, preheat oven to 325. Bake for 50 minutes or until set and lightly browned on top.
*Spinach is optional...this recipe can be made without it.
