Smelts
5 lbs. fresh or frozen smelts
1/2 cup flour
1 tsp. salt
4 cups vegetable oil

Dressing
2 cloves crushed garlic
1/2 tsp. red pepper powder
1/4 cup lemon juice
2 tbsp. olive oil
pinch of salt

Directions:
Directions:
Wash the smelts well. Put in a ziplock bag.
Mix flour and salt and add to the bag of smelts.
Shake bag until smelts are coated with the flour mixture.

Heat oil in frying pan. Fry fish for approximately 3 - 5 minutes.

For the dressing:
mix all ingredients together.

Add dressing to the smelts.

We love smelts and my mother never made them without the wonderful lemony dressing. We always ate smelts with tabouli, French fries and hummus.
