1 egg
½ c. milk
½ c. flour
½ c. corn flake crumbs
1 tsp. salt
¼ tsp. pepper
1 boneless chicken breast
2-4 c. veg. oil for frying
3 c. chopped romaine lettuce
1 c. red cabbage
½ c. Napa cabbage
½ carrot julienned or shredded
1 green onion chopped
1 Tbsp. sliced almonds
⅓ c. chow mien noodles

Dressing
3 Tbsp. honey
1 ½ Tbsp. rice wine vinegar
¼ c. mayonnaise
1 tsp. Grey Poupon mustard
⅛ tsp. sesame oil

Directions:
Directions:
1. Preheat oil around 350º. Blend together all ingredients for dressing in small bowl with electric mixer. Put dressing in the refrigerator to chill while you prepare the salad.
2. Beat egg, add milk and mix well. In another bowl combine flour with corn flake crumbs, salt, and pepper.
3. Cut chicken breast into 4 or 5 long strips. Dip each strip of chicken into mixture then fry each chicken finger for 5 minutes or until coating is brown.
4. Prepare all chopped romaine, cabbage, carrots and onion. Toss together. Sprinkle almonds over salad then chow mien noodles.
5. Cut chicken in bite size pieces. Place in center of salad. Serve the dressing on the side.
