250 g Unsalted Butter
3/4 c. Vanilla Caster Sugar
1 Egg
2 tsp. Rose Water
21/2 c. All-Purpose Flour
70 g Ground Pistachios (plus extra to garnish)
3 tbsp. Dried Rose Petals (plus extra to garnish)

Directions:
Beat the butter and sugar together until light and fluffy. Add the egg and rose water and continue beating until incorporated. Using a wooden spoon, add the flour, pistachios, and rose petals. Stir until soft dough forms. Divide the dough into half and roll each half into 18cm long logs. Wrap in plastic and refrigerate for 45 minutes, or until firm. Preheat oven to 350ºF (180ºC). Take one half of the rolled dough from the fridge, remove the plastic and slice 4mm rounds. Place each round onto a lined baking sheet and bake for 20 minutes or until the edges are slightly golden. Cool on a wire rack. To serve, sprinkle a bit of ground pistachios and rose petals over the cookies. Makes 60 cookies.
