1 lb almond paste
4 egg whites (slightly beaten)
2 cups sugar
3 oz pignoli

Directions:

Preheat oven to 350º.

(1) Cut the almond paste into small pieces and place in a small mixer bowl. Beat it for 1 min or until smooth and soft. Slowly add the sugar. Beat well.

(2) Add egg whites and continue beating until smooth. Stack 2 cookie sheets one on top of another and cover with a piece of parchment paper.

(3) Place mixture in a pastry bag. Using ½ inch tip pipe mixture on paper. Or drop by teaspoonful on paper leaving 1 inch between each cookie.

(4) Sprinkle each cookie with 8 to 10 pine nuts.

(5) Bake until lightly brown - About 20 min. When cookies are cool remove from paper using sharp knife dipped in hot water. If cookies stick then wring out towel in hot water and lay it on the counter top.

(6) Place the paper on wet towel, and wait for a few minutes. The moisture will loosen the cookies sufficiently to remove them.
