whole pheasant
2 medium carrots, chopped medium
1 stalk (leaf) celery, chopped medium
parsley dried or fresh (about 2 tbsp)
1 small onion, chopped
1 clove garlic minced fine
1 can mushroom soup
1/2 cup rice (as directed with 1 cup water)

Directions:
Directions:
Wash pheasant and simmer in a little water until meat comes off bones. Dice meat in 1/2" cubes, set aside. Cook vegetables and spices in saucepan until tender. Place pheasant cubes in pan & add mushroom soup and vegetables. SImmer at low heat until a pot of rice is cooked. Season as desired with salt and pepper. I like curried rice so I add a little curry powder.
