4 baby eggplants ...cut in 1/2
2t chili powder
1t cumin
1C firm tofu, diced
1 lime zest end and juiced
1C rinsed black beans
1/2 white onion finely diced
1/2 C each red, yellow peppers ...finely diced
1/2C cherry tomatoes finely chopped
2 cloves garlic grated
2t olive oil
Salt/pepper to taste
5 T cilantro finely chopped and divided

Directions:
Directions:
1. Scoop centre of eggplants, leaving 1/4" at each end
2. Put scooped eggplant into bowl and add other ingredients but only 3 T cilantro
3. Stuff into 1/2 eggplant ...packing tight, and drizzling with oil
4. Grill with lid on 10 mins and open; rotate; close lid again and grill another 10 min.
