2 c. black and/or green olives, pitted, drained, rinsed
2 (3 x 1/2 in.) strips lemon peel
4-6 cloves garlic, sliced
2 tsp. snipped fresh oregano
1/2 tsp. crushed red pepper
1/2 c. olive oil
1/2 c. lemon juice
2 bay leaves or 1 tsp. dried

Directions:
Directions:
Combine all and put in a one quart jar. Cover and shake to coat olives. Refrigerate 2 days, shaking jar occasionally. To serve, let stand at room temperature for 1-2 hours. Can store in refrigerator for up to 2 weeks.
