6 bell peppers
1/2 lb. ground beef
1/2 chopped onion
1/3 cup chopped celery
1/2 tsp. salt and pepper
1/2 tsp. nutmeg
1 1/2 cup diced tomatoes
1 1/2 cup cooked rice
1/2 cup bread crumbs
1/2 cup grated cheddar cheese

Cut tops off bell peppers and remove seeds. Drop into boiling water for just a minute. Put peppers in baking pan. Heat oven to 375. Brown ground beef with onion and celery. Add tomatoes and seasonings and simmer. Add rice and stuff peppers with mixture. Top with cheese and bread crumbs and bake for 30 min. You can use less rice or no rice if you prefer just a meat mixture. In that case you will need to brown 1 lb. of beef instead of 1/2 lb.
