3/4 kg (about 1 pounds) large prawns, unshelled, trimmed, cleaned, deveined and drained

Mix A:
2 cloves garlic, finely chopped
1 teaspoon salt
1 teaspoon wine
2 slices ginger
1 spring onion (keep white ends only)

Directions:
Directions:
1. Mix ingredients (A) in a large bowl.
2. Heat oil. Deep fry prawns about 5 minutes over high heat until light brown.
3. Drain oil and remove prawns. Add prawns to mixture (A) in a large bowl, cover tightly and shake for 1 minute to allow the seasoning to permeate the prawns.
4. Cover another 3 to 4 minutes and serve immediately.
