1 pound white fish fillets, skinned and cut into 2” x 1” slices
1/4 teaspoon ground ginger
1 tablespoon corn flour
salt
1 egg white, beaten until frothy
6 tablespoons oil

Sauce:
1 1/2 tablespoons butter
4 tomatoes, skinned and quartered
2 1/2 tablespoons soy sauce
2 tablespoons tomato puree
2 teaspoons corn flour
6 tablespoons chicken stock
2 tablespoons rice wine
1 teaspoon sugar

Directions:
Directions:
1. Rub the fish slices with the ginger, corn flour and salt, then coat with egg white.
2. Heat the oil in a large frying pan. Add the fish slices and fry for 1 1/2 minutes or until golden brown.
3. Remove the fish from the pan.
4. Pour off the oil from the pan.
5. In pan, add the butter and melt it. Add the tomato quarters and stir fry for 2 minutes.
6. Stir in the soy sauce and tomato puree.
7. Dissolve the corn flour in the stock and add to the pan with the wine and sugar. Simmer stirring until thickened.
8. Return the fish slices to pan and stir fry for a final 2 minutes. Serve hot.
