1 pound lean pork, cut into thin slices
2 tablespoons sherry
2 tablespoons soya sauce
salt to taste
freshly ground pepper to taste
pinch of powdered ginger
2 medium onions
1/4 cup bamboo shoots
1 cup fresh bean sprouts
1/2 pound fresh mushrooms
1 stalk celery
2 ounces transparent noodles
4 tablespoons dried mushroom
8 tablespoons oil
3 tablespoons soya sauce
1 teaspoon sugar
1 tablespoon corn starch
2 jiggers sherry

Directions:
Directions:
1. Cut pork and mix with 2 tablespoons sherry, 2 teaspoons soya sauce, salt and pepper, and ginger. Marinate for 1 hour.
2. In oil, add pork and fry. Remove.
3. Add onions, bean sprouts, bamboo shoots, and mushrooms. Simmer for 3 minutes.
4. Fold in meat, celery, and noodles. Season with 3 tablespoons soya sauce and sugar.
5. Cook for 3 minutes.
6. Blend corn starch with 2 jiggers of sherry.
