2 cups green peppers, cut into 1½” square pieces
4 tablespoons vegetable oil
2 tablespoons black bean garlic sauce
1 pound chicken breasts, boned, skinned, cut into square inch pieces
2 teaspoons Chinese cooking wine or sherry

Sauce:
1 tablespoon oyster sauce
1/2 teaspoon sugar
1/2 tablespoon dark soya sauce
1/4 cup chicken broth

Directions:
Directions:
1. Blanch green peppers in boiling water for 30 seconds. Drain and set aside.
2. Blend Sauce ingredients together. Set aside.
3. Heat wok. Add 2 tablespoons oil. When oil is hot, stir in black bean garlic sauce, then add chicken.
4. While stir frying chicken, drizzle in cooking wine.
5. Stir fry until chicken is no longer pink (about 2 to 3 minutes). Remove from wok and set aside.
6. Clean wok, heat and add remaining oil. When oil is hot, add green peppers, chicken and pre-blended sauce.
7. Stir until cooked thoroughly.
8. Serve immediately.
