4 eggs
3 cups chicken broth
1/4 teaspoon salt
1 teaspoon mirin
1 teaspoon soya sauce
4 pieces cooked chicken
4 dried mushrooms
1 piece artificial crab meat, cut into 4-6 small pieces (1 for each chawan)
1 small can unagi (canned eel) (optional)

Directions:
Directions:
1. Beat eggs and add cooled chicken broth, salt, Mirin, and soya sauce to taste.
2. Divide chicken and crab meat, mushrooms, celery tops and put into small chawan cup.
3. Pour in egg mixture into chawan cup.
4. Cover chawan cups with lid and steam 10 to 20 minutes until set but still smooth and silky.

Soup base may be substituted to make broth. Then only soya sauce is added.
