2 – 3 lbs beef short ribs or big beef side ribs
1 tbsp vegetable oil
2 cloves garlic
1 onion, minced
¼ cup packed brown sugar
1 tsp ground black pepper
1 can (14 oz) tomato sauce
½ cup chili sauce
½ cup beef stock
1 tbsp Worcestershire sauce
1 tbsp molasses
1 tsp liquid smoke
1 tsp hot pepper sauce

Directions:
In a pressure cooker, heat oil over medium – high heat. Add ribs in batches and cook for about 15 minutes or until browned. Transfer ribs to bowl and set aside. Discard any excess fat.

Reduce heat to medium. Add garlic and onion; sauté for about 3 minutes until
soft. Add sugar, pepper, tomato sauce, chili sauce, stock, Worcestershire molasses, liquid smoke and hot pepper sauce; simmer for 15 minutes, scraping up any browned bits from the bottom of the pressure cooker. Return ribs to cooker along with any accumulated juices.

Lock the lid in place and bring cooker up to low pressure over medium - high heat. Reduce heat to medium low, just to maintain even pressure, and cook for 25 minutes. Remove from heat and release pressure quickly.

Simmer, uncovered for another 10 minutes, basting often until ribs are glazed and sauce is thickened. Serve ribs along with lots of horseradish, bean and baked potatoes.
