2 to 3 baked potatoes
2 T. butter
4 eggs

Yield: 4 servings
Skin and shred leftover baked potatoes. Melt butter in large skillet, tipping pan to coat bottom. Add potatoes in an even layer; cook 5 to 7 minutes over medium heat or until bottom is lightly browned. Turn potatoes and shape into 4 mounds. Form a hole in the center of each and add 1 egg. Cover; cook 3 to 5 minutes or until eggs are done. Season with salt and pepper. Serve with breakfast meat, toast, and fruit.
