6 tbsp apple cider vinegar
1/4 c sugar
2 tbsp poppy seeds
1 tbsp Dijon mustard
1 tsp soy sauce
1 tsp kosher salt
1 pinch white pepper
2 tbsp minced yellow onion
3/4 c canola oil
1/4 c olive oil

Directions:
Directions:
Combine all ingredients EXCEPT oils in a small sauce pan and allow to simmer for about 10 minutes. Allow to cool until the steam stops. Add mixture to a food processor or blender. Turn on to mix well.

Combine the oils and drizzle into the dressing base while the food processor or blender runs. This will create a thick, emulsified dressing. Chill. Store for up to a week.

If the dressing separates, re-blend.
