Ingredients:  
1 cup diced celery
1 small onion, chopped fine
1 cup carrots, chopped fine
1 tbsp oil
5 cups Swanson's chicken stock
1 package Uncle Ben's Long Grain & Wild Rice (with packet)
2 cups diced chicken breast
8 oz Velvetta cheese cut into 8 chunks
1 can Cream of Chicken soup, undiluted
Sherry to taste (about ¼ cup)
Fresh ground pepper

Directions:
Directions:
Sauté celery, onions, carrots in 1 tbsp oil over medium heat until soft.

Add chicken broth and rice. Bring to boil; cover and simmer for 25 minutes.

Add chicken, cheese, soup, sherry and pepper to taste.

Simmer until blended and cheese is melted. Do not let it boil. You may need to add a bit more liquid.
