1 lb pork breakfast sausage (like Jimmy Dean's), hot or mild
8 oz of sharp or extra sharp cheddar cheese, grated
2 cups of Bisquick
1 tsp oregano or celery salt
1 tsp hot sauce (optional)

Mix ingredients together and shape into small balls. Bake at 325º for about 25 minutes or until golden brown, makes about 30 sausage balls.

You can make these as hot or mild as you prefer. Generally I like the mild sausage, extra-sharp cheddar and include the tsp of hot sauce. That seems to even out the heat, and the extra-sharp cheddar has more flavor.
