1 tbsp olive oil
1 each: medium onion, medium celery stalk, medium red bell pepper, cut into medium dice
1½ tsp dried thyme
2 – 15 oz. can black-eyed peas, drained and rinsed
1 – 15 oz. can corn, rinsed and drained
1 – 14.5 oz. can petite diced tomatoes
8 slices Canadian bacon, diced
1 tbsp liquid smoke
2 cups chicken broth
¼ cup chopped parsley
Salt and pepper

Directions:

Heat oil in a 12-inch skillet over medium-high heat. Add onion, celery, and bell pepper all at once and sauté until tender, about 5 minutes. Add thyme, then peas and corn and, finally, tomatoes, bacon, liquid smoke and broth. Stirring occasionally, bring to a simmer. Reduce heat to medium-low; simmer, stirring occasionally, until ingredients are tender, flavors have blended, and liquid has reduced to your liking, 15-20 minutes or more. Remove from heat and stir in parsley. Add salt and pepper to taste, and serve.

You can make this a vegetarian dish by leaving out the bacon or substituting soy-based bacon product and using vegetable broth.

Adapted from Pam Anderson’s “I Love My New Meatless Days” recipes. This is a traditional southern dish, eaten on New Year’s Day for good luck. I don’t know about good luck, but this colorful dish could certainly bring good health.
