2 lbs. boneless chicken breast, cut in 1" cubes
8-10 medium potatoes, cut in 1/2" cubes
1/3 c. olive oil
1 1/2 tsp. salt
1 TBSP pepper
2 TBSP garlic powder
6 TBSP hot sauce (pretty hot if use this...for milder version use V-8 or ElPato tomato sauce)

for topping:

2 c. fiesta blend cheese, grated
1 c. crumbled bacon
1 c. diced green onions

Directions:
Preheat oven to 500. Spray 9x13 baking dish. In large bowl mix together olive oil, salt, pepper, garlic powder and hot sauce (or substitute). Add potatoes and stir to coat. Carefully scoop potatoes into baking dish, leaving as much of oil/hot sauce mixture as possible. Bake potatoes 45-50 min., stirring every 15 minutes until cooked through and crispy brown on outside. While potatoes cook, add chicken to bowl with oil and hot sauce and stir to coat. Remove potatoes from oven, lower heat to 400. Top potatoes with chicken. In a bowl, mix together cheese, bacon and green onions and spoon over top of chicken/potato pan. Bake 15 min. until chicken is cooked through and top is bubbly.
