2 1/4 c. flour
1/4 tsp. salt
1 tsp. ginger
2 tsp. baking soda
1 tsp. cinnamon
1 1/2 sticks unsalted butter (3/4 c.), softened
1/4 c. molasses
1 c. packed brown sugar
1 large egg
White sugar for coating
Vegetable oil spray

Oven - 375º.

Line cookie sheets with foil, greased.
Sift dry ingredients together. Cream butter and brown sugar until light and fluffy. Beat in egg and molasses until no longer curdled.
Mix in dry ingredients. Batter will be stiff.

Using 1/4 c. batter, roll each into a ball. Then roll ball in sugar. Place 6 on each cookie sheet. (they spread during baking)
Dampen fingers with water and press down lightly on each cookie to flatten a little and dampen top.
Bake 12 min. Cool on cookie sheet (Dough can be frozen for slice and bake cookies.)
