1 1/2 lbs potatoes russet potatoes sliced into 1/4" slices
3 slices of bacon
1 medium onion, finely chopped
1 tbsp. all purpose flour
1 tbsp. sugar
1 tsp salt
1/4 tsp celery seed
Fresh ground pepper
1/2 cup water
1/4 cup vinegar

Directions:
Directions:
1) Cook potato slices in salted water (1/2 tsp salt to 1 cup of water), covered, 20 to 25 minutes until tender. Drain and let cool.

2) Fry bacon until crisp, drain on paper towel. Cook onion in the bacon fat until tender. Stir in flour, sugar, salt, celery seed and pepper. Cook over low, stirring constantly until bubbly, remove from heat.

3) Stir in water and vinegar, return to heat and bring to a boil. Boil one minute.

4) Crumble bacon into hot mixture and add potato slices. Return to heat and cook, stirring gently to coat potato slices, about 3 more minutes.

5) Serve with cooked red cabbage, a selection of wursts and mustard
