Mama's Pecan Pie Recipe

1 deep dish pie crust, partially thawed or rolled out into a 9" pie pan
3 eggs
2/3 cup sugar
1/2 tsp salt
1/3 cup melted butter
1 tsp vanilla extract
1/2 cup dark Karo syrup
1/2 cup light Karo syrup
1 1/4 cup pecan pieces and 20 perfect pecan halves for the top

Note: we always used half light Karo and half dark Karo, many people would use 1 cup light Karo, or a different proportion to taste - all dark gives a very different flavor to the pie.

1) Preheat oven to 375º

2) Beat eggs with sugar, salt, melted butter. Add Karo syrup and vanilla extract. Stir in pecans. Pour into pie crust.

3) Carefully float the perfect pecan halves curved side up on the surface of the pie.

4) Bake until set, 40 to 50 minutes. You will probably have to cover the edges of the pie with foil. Cool before serving.

5) To freeze, cool pie for 2 hours. Freeze uncovered at least 3 hours. Remove from freezer and wrap with freezer wrap and aluminum foil. Store up to 1 month. Unwrap pie and thaw in refrigerator for at least 30 minutes.

Daddy loved pecan pie (so do I, about once a year). Mama just loved pecans, and always put more pecans in than the recipe called for. Sometimes she would overdo this and the pie came out solid, like pecan brittle in a pie crust. This tastes wonderful, but it isn't pie.

CJ hates pecan pie, and loves to tell this story: The first time he met my parents and had dinner at their house, Mama made a special dinner. Huge T-bone steaks, salad, baked potatoes, and for dessert, pecan pie! This was bad, but not insurmountable except that her idea of serving pecan pie was slapping it on the table and cutting it into 4 pieces (OK, he exaggerates a little, there were 5 pieces, 3 quarters and Mama and I split a quarter), then sliding a quarter onto his plate. I didn't exactly know he didn't like pecan pie, so I said "Dig in". He manfully ate his whole piece and the rest is history. I'm not sure if he kept it down or not....
