6 baking potatoes
1 1/2 cups sour cream
6 tablespoons butter
2 tablespoons chives - optional
Salt and pepper to taste
Real bacon bits (or cooked crumbled bacon)
Shredded cheddar cheese if desired

Directions:
Directions:
Bake potatoes (can be cooked in microwave also). Cut in half and scoop out inside of each half being careful not to cut into peeling. Mash the potato that you scooped out with the other ingredients, except the bacon.

Re-stuff the potato skins with above mixture. Sprinkle with bacon. You may also sprinkle with a little shredded cheddar cheese.

Heat on baking sheet in 350º to 400º oven until heated through.

Makes 12 servings.

Prepare ahead of time and chill or wrap in foil to freeze. Bake at 400 degrees to serve.
