1 (12 to 14 lb.) turkey
1/2 c. butter, melted
salt and pepper

Oven: 325º ~ Yield: 20 servings
Remove giblets and neck from turkey; reserve for giblet gravy. Rinse turkey thoroughly inside and out with cold water; pat dry. Lightly pack cornbread stuffing into body cavities of turkey. Tuck legs under flap of skin around tail; or close with skewers and truss. Tie ends of legs together with baking cord. Lift wing tips up and over back, and tuck under turkey. Place turkey on a rack in a roasting pan, breast side up; brush entire surface of bird with butter. Sprinkle with salt and pepper. Insert meat thermometer into meaty part of thigh, making sure it does not touch bone. Bake for 2 to 3 hours, basting often with butter. If turkey starts to brown too much, cover with aluminum foil. Cut cord holding drumsticks to tail to ensure that thighs are cooked internally. Bake 1 to 2 additional hours or until thermometer registers 180º. Turkey is done when drumsticks are easy to move up and down. Let turkey stand 15 minutes before carving. Garnish with curly endive or ornamental cabbage and orange wedges.
