1 cake of yeast
1 C warm water

Couple medium potatoes peeled and boiled - save potato water

1 Tblsp sugar
1 1/2 tsp salt
2 quarts flour

Directions:
Directions:
Dissolve yeast in warm water. Add the potato water/mashed potatoes with the yeast and warm water, making 1 quart in all. Add sugar and salt. Pour mixture over flour and stir thoroughly. Let sponge set over night. In the morning, mix in more flour to make a stiff dough. Let rise until it cracks, knead and make into loaves. Let rise to twice its bulk. Bake 45 minutes at 350º.
