6 egg yolks (separated from whites and hard boiled)
2 c. flour
1/2 tsp. salt
3/4 c. shortening
3/4 c. sugar
1/2 tsp. lemon extract
3 T. cream (or canned milk)

Directions:
Cook egg yolks (separate yolks from whites; drop from saucer one at a time into hot, salted water, simmer until hard cooked)
Put egg through a wire sieve when cooled
Sift together: flour and salt
Cream: shortening, adding sugar gradually, beating until light and fluffy.
Add: egg yolks and lemon extract.
Blend in cream and dry ingredients alternately to creamed mixture, beating well after each addition.
Roll dough to 1/8 inch thickness and cut into Christmas cookie shapes, or use cookie press, or twist them
Place on greased baking sheet.
Decorate with colored sugar, candied fruit, buts, or coconut.
Bake in moderate oven (375º) until edges become delicately browned - 6 - 8 minutes for tolled or pressed cookies, 10 to 12 minutes for knots.
