12 egg whites (1 2/3 c.)
2 c. sugar
1 1/3 c. cake flour
2 T. plus 2 tsp. cocoa
1 4/ tsp. salt
1 1/4 tsp. vanilla
1 1/2 tsp. cream of tartar

Oven: 150º
Sift flour and cocoa together (10 times). Set aside. Beat egg whites at high speed until frothy. Add cream of tarter. Gradually add sugar and salt; beat until just holds stiff peak. Fold in flour; mix gently with coil whip. Add vanilla. Rinse tube pan with water, shake out excess. Pour batter into pan. Place in oven for 2 minutes; turn oven to 275º. Bake for 30 minutes. Turn oven to 325º; finish baking about 35 minutes. Broom straw should come out clean. Cool upside down.
Icing: 2 1/4 c. sugar, 3/4 c. milk, 3/4 c. cream, 5 1/2 tsp. cocoa, 4 1/2 tsp. corn syrup, 1 tsp. vanilla. Cook to softball - beat till it looses gloss - spread carefully on cake. (1930's recipe from Grandmother Thralls)
