2 cups dry lentils
2 quarts chicken broth
1 onion diced
1/4 cup tomato paste
2 gloves garlic minced
2 tsp. ground cumin
1 bay leaf
1 Tbsp. olive oil
1 stalk celery or carrot shredded optional
1 Tbsp. lemon or lime juice optional

Directions:
Directions:
In a large pot, combine ingredients, bring to a boil then reduce heat, cover and simmer at least an hour 1 hour until lentils are soft. You can add smoked sausage or kielbasa to this if you like.

This is one of my favorite soups, it's hearty and good with some homemade bread.
