1 lb. ground beef
2 24oz. jar spaghetti sauce
24 oz. cottage cheese
3 cups mozzerella shredded cheese
2 eggs
1/2 cup grated Parmesan cheese
2 tsp. Italian seasoning
1 tsp.garlic powder
1 tsp.salt and 1/2 teas.pepper
1 box lasagna noodles uncooked
1/2 cup water

Directions:
Brown ground beef, drain, add spaghetti sauce and 1 tsp. Italian seasoning. Simmer 5 minutes. In a large bowl mix together the cottage cheese, 2 cups of the mozzarella, eggs, half the Parmesan cheese, and 1 tsp. Italian seasoning, garlic powder, salt, and pepper.
In the bottom of a 9x13 pan or dish spread 1 cup of sauce mixture. Cover this with four or five uncooked noodles, break noodles to fit pan, spread with half of cheese mixture, then half of remaining sauce. Repeat noodles,last of cheese mixture. Finally top with noodles, remaining sauce, remaining mozzarella and parmesan. Add 1/2 cup water around the inside edge of pan. Cover tightly with foil. Bake at 350º for 45 minutes. Uncover and bake an additional 10 minutes. Let stand 10 minutes before serving. Serve with some salad or other green vegetable and of course some garlic bread.

I love this recipe because you don't have to cook the noodles first and that saves quite a bit of cooking time and trouble. You can substitute Ricotta for the cottage cheese if you want and add 1/4 cup more water because it's a dryer cheese.
