1 chicken, cut up
1/4 cup olive oil
3/4 cup pimiento-stuffed olives
1 diced onion
1 green pepper, cut into thin strips
8 oz can tomatoes, not drained
1 bay leaf
1/2 cup chopped celery
1/4 cup celery leaves
1 package Spanish Rice, cooked according to package

Directions:

Saute chicken in hot oil in large dutch oven; Add next 6 ingredients; cover and
cook over low heat 45 minutes or until chicken is tender.
Stir in celery and leaves.
Remove from heat and remove bay leaf. Serve over Spanish rice.
