½ c. hard margarine or butter
1¼ c. packed brown sugar
1 large egg
1 c. sour milk (add 1 tbsp vinegar to milk)
1 tsp vanilla
1½ - 2 c. finely chopped fresh rhubarb
2½ c. flour
1 tsp baking soda
½ tsp baking powder
1 tsp salt

Topping:
⅓ c. sugar
1 tbsp margarine softened

Directions:
Directions:
Cream margarine and brown sugar together in large bowl. Beat in egg and add sour milk and vanilla. Mix and add rhubarb - stir.
In a medium bowl, combine flour, baking soda and salt. Add this to the rhubarb mixture and stir just until moistened. Turn into a greased 9x5 loaf pan.
Mix the sugar and margarine well. Sprinkle over the batter. Bake at 350º for 1 hour. Let stand in pan for 15 minutes.
