8 c. shredded cabbage
1¼ tsp salt
3 c. grated carrots
half red onion thinly sliced

Dressing:
⅓ c. white vinegar
2 tbsp vegetable oil
4 tsp sugar
1 tsp dry mustard
½ tsp celery seed
¼ c. chopped fresh parsley

Directions:
Directions:
In large bowl, toss cabbage with 1 tsp salt. In separate bowl, toss together carrots, onions, and remaining salt. Let both bowls stand for 1 hour. In a colander drain cabbage. By handful squeeze out the moisture. Add undrained carrot mixture to combine.
Mix dressing and add to salad. Cover and refrigerate for 1 hour.
