2-4 small russet potatoes
Salt and pepper
Chopped onion, up to 1/2 cup (optional)

Directions:
Directions:
1) Peel and slice potatoes thinly (about 1/8" thick).

2) Put 1/4" oil in a skillet, heat on high, add onion if desired, cook one minute stirring constantly. Add potatoes in overlapping slices. Adjust heat so that the edges of the potatoes get browned and caramelized rapidly, but not overly burned. Do not stir too much. Add salt and pepper.

3) When edges of potatoes begin to brown, turn down the heat to medium, cover the skillet and cook the potatoes for 10-15 minutes.
