2-3 squash, washed and sliced
1/4 cup of flour mixed with 2 tbsp. of cornmeal
Salt and pepper

1) Salt and pepper the sliced squash, then sprinkle or toss in the flour and meal mixture.

2) Fry 1/4" hot oil until squash is tender and crust is crispy, about 5 minutes.

This works for other vegetables beside squash - okra and green tomatoes in particular. Battered and deep fried do taste better, but this method is faster and better for you
