12 oz to 1 lb of collard greens
1 tbsp. bacon drippings
1/4 cup of sugar
Salt and pepper to taste
Lemon juice as desired

1) Wash collards thoroughly, remove stems and pick out any wilted or yellowed greens. Chop coarsely.

2) Put collards into a pot with the water that is clinging to the greens, if too much has drained off, add 1 tbsp. of water. Add bacon dripping and 1/4 cup sugar and 1 tsp of salt to start.

3) Bring to a boil, stir, add a little water if the greens have not released enough water, cover and cook for 30-45 minutes. Taste for salt, pepper and sugar.

Again, my family wilts greens more than cooks them, over cooking being a big no-no. You have to be vigilant early in the cooking process or they will burn before the liquid is released from the leaves.
