12 oz - 1 lb young, tender turnip greens or mustard greens (no more than 4-5 inches tall, this recipe is basically for home grown greens, greens available in a store are almost always larger and tougher)
Salt to taste
1 tbsp. bacon drippings
1 tsp lemon juice(optional)
1/4 cup sugar (as needed, see recipe)

1) Wash greens thoroughly using at least 2-3 changes of water. Pick through greens, discarding any yellow or wilted leaves, cut off any tough stems. Larger, older greens should be chopped coarsely; young, tender leaves can go into the pot whole. If desired, toss the greens with juice of 1/2 lemon or 1 tsp., this enhances their vitamins.

2) Put the leaves into a pot without any additional water. Do not dry or shake the leaves, you want to leave the water clinging to them. Add 1 tsp of salt, 1 tbsp. of bacon drippings and bring to a boil (almost a sizzle) and stir to help them release their water and wilt. Cover, turn the heat down to medium and cook 15 minutes, stirring every 5 minutes to be certain there is enough water in the pot.

3) If the greens are older and tougher OR if you have added some chopped turnips to the pot, add 1-2 tbsp. of water, up to 1/4 cup for the roots and the 1/4 cup of sugar, then cook longer, 30-45 minutes until everything is tender.

This is the way my family cooks young tender greens. This is NOT the way you will see them prepared in most cookbooks. This method must be adapted if the greens are larger than the size stated in the recipe or if you are adding turnip roots to the pot. Serve with pepper sauce.
