1/2 cup mayonnaise
1/3 cup sugar
1/2 tsp. salt
3 tbsp cider vinegar
1 medium sized Vidalia onion, finely chopped
1 large bunch of broccoli, florets and stems cut into bite sized pieces
1/3 cup of raisins
8 pieces of crisp bacon, crumbled.

1) Make dressing by stirring together the mayonnaise, sugar and salt. Stir in the vinegar one tbsp at a time. Add the onions and broccoli and refrigerate for 2-4 hours.

2) Just before serving, stir in raisins and crumbled bacon. Taste for salt and serve.

3) This dish can sit out for awhile and is safe for buffets and picnics because of the vinegar in the dressing. Leftovers should go into the refrigerator and tend to be a little soggy the next day.

This is a slightly adapted version of Shirley Corriher's recipe from her fabulous cookbook Cookwise. This is a great cookbook for the intermediate cook, someone who has done some of their own cooking and is ready to tackle more complicated dishes AND who wants to know the whys of cooking. This salad, though, is far from complicated and is a very tasty and traditional version of broccoli salad.
